PREPARATION
Preheat your oven to 400°F.
Toss the cubed butternut squash with half of the olive oil, a pinch of salt and pepper, and the mixed fresh herbs. Spread on a baking sheet and roast for about 20-25 minutes until tender and slightly caramelized.
While the squash roasts, heat the remaining olive oil in a large skillet over medium heat. Add the diced red onion and sauté until softened, about 3 minutes.
