INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli Florets
100 g Russet Potato
1 tsp Olive Oil
2 cloves Garlic
2 tbsp Nonfat Greek Yogurt
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F for roasting the broccoli.
Season the 6 oz salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Sear the salmon skin-side down for about 3-4 minutes, then flip and cook for an additional 3-4 minutes until cooked to your liking.
Meanwhile, toss the broccoli florets in the remaining olive oil, minced garlic (using one clove), salt, and pepper. Spread them on a baking sheet and roast in the preheated oven for 12-15 minutes until tender and slightly crispy.
For the garlic mash, peel and dice the potato. Boil in salted water until tender, about 15 minutes. Drain and mash with the remaining minced garlic (use the second clove) and stir in 2 tablespoons of nonfat Greek yogurt. Season with salt and pepper.
Plate the seared salmon alongside the roasted broccoli and a serving of garlic mash. Enjoy your meal while it’s warm.
