Savor the hearty flavors of a perfectly seared steak enriched with a delicate herb-garlic butter, paired with tender roasted baby potatoes. This balanced dish offers a satisfying mix of robust, savory notes and the comforting earthiness of roasted potatoes.
INGREDIENTS
5 oz Sirloin Steak (~142g)
150g Baby Potatoes
1 tsp Unsalted Butter (~5g)
2 cloves Garlic
2 sprigs Fresh Thyme
2 tbsp Fresh Parsley
Salt (pinch)
Black Pepper (pinch)
PREPARATION
Preheat your oven to 425°F (220°C) for the potatoes.
Wash the baby potatoes, cut them in halves if needed, toss with a pinch of salt, pepper, and a drizzle of olive oil if desired, then spread them out on a baking sheet. Roast for 20-25 minutes until tender and golden.
While the potatoes roast, pat the steak dry with paper towels. Season both sides with salt and pepper.
Heat a skillet over medium-high heat. Add the 1 tsp of butter and once melted, add the 2 crushed garlic cloves and 2 sprigs of fresh thyme to infuse the butter.
Place the steak in the skillet and sear for about 3-4 minutes on each side for medium rare, spooning the infused herb-garlic butter over the top as it cooks.
Remove the steak from the skillet and let it rest for a few minutes. Slice thinly against the grain if desired.
Plate the sliced steak alongside the roasted baby potatoes and garnish with 2 tablespoons of chopped fresh parsley. Serve immediately.
