INGREDIENTS
6 oz Salmon Fillet
2 cups Fresh Spinach
1 Garlic Clove
1 tsp Fresh Mixed Herbs
1 tsp Olive Oil
1 Lemon Wedge
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Pat the salmon dry and season both sides with salt and pepper.
Mix the fresh herbs with a pinch of salt and press gently onto the top of the salmon to form a crust.
Place the salmon on a baking tray lined with parchment paper and bake for 12-15 minutes until the fish flakes easily.
While the salmon bakes, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
Add the fresh spinach to the skillet and toss gently until just wilted, about 2-3 minutes. Season lightly with salt and pepper.
Plate the herb-crusted salmon alongside the garlic sautéed spinach, and finish with a squeeze of lemon juice over the top.
