INGREDIENTS
5 oz Salmon Fillet
4 cups Fresh Spinach
1 Garlic Clove
1 tsp Olive Oil
1 tsp Fresh Dill
1 tsp Fresh Parsley
1 tsp Lemon Zest
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F. Line a baking tray with parchment paper.
Pat the salmon dry with paper towels. In a small bowl, mix the fresh dill, parsley, and lemon zest with a pinch of salt and pepper to form the herb crust.
Rub the herb mixture evenly over the top of the salmon fillet.
Place the salmon on the prepared baking tray and bake for about 12-15 minutes, or until the salmon is just cooked through and flakes easily with a fork.
While the salmon bakes, heat a teaspoon of olive oil in a skillet over medium heat.
Add the minced garlic clove to the skillet and sauté for about 30 seconds until fragrant.
Add the fresh spinach to the skillet and sauté, stirring constantly, until the spinach wilts, about 2-3 minutes. Season with a pinch of salt and pepper.
Once the salmon is cooked, plate it alongside the garlic sautéed spinach. Serve immediately and enjoy the delightful blend of flavors.
