INGREDIENTS
5 oz Lean Ground Pork
1 Egg
1/2 cup Cooked Rice Noodles
1/2 medium Red Bell Pepper
1/2 cup Bean Sprouts
2 tbsp Green Onions
1 clove Garlic
1 tsp Fresh Ginger
1 tbsp Soy Sauce
1 tsp Chili Garlic Sauce
PREPARATION
Prepare all ingredients by chopping the red bell pepper, green onions, garlic, and ginger. Set aside the bean sprouts and cooked rice noodles.
In a large skillet or wok over medium-high heat, add the lean ground pork. Cook, breaking it up with a spatula, until it starts to brown.
Add the minced garlic and ginger to the pork. Stir fry for about 1 minute until fragrant.
Pour in the soy sauce and chili garlic sauce, stirring to coat the pork evenly with the sauce.
Push the pork to one side of the skillet and crack the egg into the cleared space. Scramble the egg until just set, then mix it into the pork.
Add the red bell pepper slices and bean sprouts to the skillet. Toss in the cooked rice noodles and chopped green onions. Stir fry for another 2-3 minutes until heated through and well combined.
Taste and adjust seasoning if needed, then serve immediately in a bowl.
