PREPARATION
Preheat a non-stick skillet over medium heat with 1 teaspoon olive oil.
In a small bowl, mix chopped fresh parsley, thyme, salt, and pepper. Pat the cod fillet dry with a paper towel and then press the herb mixture evenly onto the top of the fillet.
