INGREDIENTS
200g Extra-Firm Tofu
1 tsp Olive Oil
2 cloves minced Garlic
2 tbsp Fresh Herbs (Parsley & Thyme)
1 tbsp Lemon Juice
100g Shelled Edamame
1/2 cup Chickpeas, drained
Salt & Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then slice into 1 cm thick steaks.
In a small bowl, mix olive oil, minced garlic, chopped fresh herbs, lemon juice, salt, and pepper.
Brush both sides of the tofu steaks with the garlic-herb mixture.
Heat a non-stick skillet over medium heat. Once hot, add the tofu steaks and sear for 3-4 minutes on each side until golden and slightly crispy.
While the tofu is cooking, warm the shelled edamame in a small saucepan or microwave and season lightly with salt if desired.
Rinse and drain the chickpeas. You can serve them as is or warm them slightly for extra flavor.
Plate the seared tofu steaks alongside the edamame and chickpeas. Drizzle any remaining herb mixture over the tofu if desired.
Serve warm and enjoy your protein-packed, vibrant meal!
