INGREDIENTS
4 oz Chicken Breast
2 cups Romaine Lettuce
2 tbsp Parmesan Cheese
1 tbsp Caesar Dressing
1 serving Crispy Chickpea Croutons (70g chickpeas)
1 tsp Mixed Herbs
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat the grill or grill pan over medium-high heat.
In a small bowl, combine 1 teaspoon of olive oil, mixed herbs, salt, and pepper. Rub this herb mixture over the 4 oz chicken breast.
Grill the chicken breast for about 6-7 minutes per side until fully cooked and internal temperature reaches 165°F. Once cooked, let it rest before slicing.
Meanwhile, drain and rinse chickpeas, toss them with a pinch of salt, pepper, and a dash of olive oil mixed with dried herbs. Roast in an oven preheated to 400°F for about 20 minutes until crispy, stirring halfway through.
Tear the romaine lettuce into a bowl, drizzle with Caesar dressing, and lightly toss to coat.
Slice the grilled chicken into strips and place on top of the dressed lettuce along with the crispy chickpea croutons.
Sprinkle Parmesan cheese over the salad and serve immediately.
