PREPARATION
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the turkey bacon and cook until it becomes crispy on both sides.
Remove the turkey bacon from the skillet, chop into bite-sized pieces, and set aside.
In the same skillet, add the remaining teaspoon of olive oil and toss in the fresh spinach. Sauté until wilted, about 1-2 minutes.
