Citrus-Garlic Pulled Pork with Fresh Slaw
Savor a vibrant twist on classic pulled pork, where tender, citrus-infused pork meets a crisp, refreshing cabbage and carrot slaw. This dish is balanced with a zesty punch of orange and lemon, complemented by aromatic garlic for an uplifting, healthy meal experience.
INGREDIENTS
5 oz Pork Tenderloin (approx 142g)
1/2 medium Orange (approx 80g)
1 tbsp Lemon Juice (approx 18g)
2 cloves Garlic
1 cup shredded Green Cabbage (70g)
1/3 cup shredded Carrot (41g)
1 tbsp Extra Virgin Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 300°F.
Season the pork tenderloin generously with salt and pepper. In an oven-safe dish, add the pork along with minced garlic.
Squeeze the juice of half an orange and one tablespoon of lemon over the pork. Drizzle with olive oil.
Cover the dish with foil and slow-roast in the oven for about 2 hours until the pork is tender enough to shred easily.
Once cooked, remove the pork from the oven and use two forks to pull the meat apart into shreds.
In a mixing bowl, combine shredded green cabbage and carrots. Add any residual citrus juices from the pork along with additional lemon juice if desired. Toss to combine.
Plate a portion of the pulled pork with a generous helping of fresh slaw on the side, and serve warm.
