Enjoy a beautifully balanced plate featuring a perfectly seared salmon fillet complemented by tender steamed asparagus and a creamy cauliflower mash accented with a touch of Greek yogurt. This dinner is both satisfying and nutritious, offering a harmonious blend of flavors and textures.
INGREDIENTS
6 oz Salmon Fillet
2 tsp Olive Oil
1 cup chopped Cauliflower
1/4 cup Nonfat Greek Yogurt
6 Asparagus Spears
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides lightly with salt and pepper.
Heat 1 teaspoon of olive oil in a nonstick skillet over medium-high heat until shimmering.
Place the salmon in the skillet, skin side down if applicable, and sear for about 3-4 minutes on each side until a golden crust forms and the salmon is cooked to your desired doneness.
While the salmon cooks, bring a small pot of water to a simmer, and add the asparagus spears. Steam them for about 4-5 minutes until tender-crisp, then remove and season with a pinch of salt.
In a separate pot, steam the chopped cauliflower for about 8-10 minutes until very tender.
Transfer the steamed cauliflower to a bowl and add the remaining 1 teaspoon of olive oil along with the nonfat Greek yogurt. Mash or blend until smooth, seasoning with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of the cauliflower mash. Serve immediately.
