Enjoy these light, fluffy pancakes bursting with natural sweetness from ripe bananas and the satisfying richness of protein powder. The oats provide a hearty texture while a hint of cinnamon and caramelization elevate the flavor profile, making this a balanced and indulgent breakfast (or any meal) treat.
INGREDIENTS
1/2 cup Rolled Oats (40g)
1 medium Ripe Banana (100g)
4 large Egg Whites (120g)
1 scoop Whey Protein Isolate (25g)
1/2 cup Unsweetened Almond Milk (120g)
1/2 teaspoon Baking Powder (2g)
1/2 teaspoon Ground Cinnamon (1.3g)
1/2 teaspoon Vanilla Extract (4g)
PREPARATION
In a blender, combine rolled oats, ripe banana, egg whites, whey protein powder, almond milk, baking powder, ground cinnamon, and vanilla extract. Blend until the mixture is smooth and well combined.
Heat a non-stick skillet or griddle over medium heat and lightly spray with cooking spray or a small pat of butter.
Pour 1/4 to 1/3 cup of batter onto the skillet for each pancake. Allow the pancakes to cook undisturbed for about 2-3 minutes until small bubbles form on the surface and the edges begin to look set.
Flip the pancakes carefully and cook for an additional 2 minutes until they are golden and fully set inside.
Remove the pancakes from the skillet. Optionally, for extra caramelization, you can rekindle some extra banana slices in the skillet for 1 minute and place them atop your stack.
Serve warm, enjoying the natural sweetness and balanced flavors of your protein-packed pancakes.
