PREPARATION
Peel and dice the sweet potato into small cubes. Finely chop the red bell pepper and onion, and roughly chop the spinach.
Heat the olive oil in a non-stick skillet over medium heat. Add the diced sweet potato and cook for about 5-7 minutes until slightly tender.
Add the chopped red bell pepper and onion to the skillet. Sauté for another 3-4 minutes until the vegetables are soft.
Slice the turkey sausage into rounds and add them to the skillet. Cook for 2-3 minutes until they are heated through and slightly browned.
