200g Potato
2 roasted garlic cloves
1 cup nonfat Greek yogurt
2 Tbsp Parmesan cheese
1 tsp Olive oil
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Toss the garlic cloves with olive oil, wrap them in a small piece of foil, and roast in the oven for about 20 minutes until soft and fragrant.
While the garlic roasts, cut the cauliflower and potato into evenly sized pieces and steam or boil them until tender, about 15-20 minutes.
Once roasted, squeeze the soft garlic out of its skins into a bowl.
Add the steamed cauliflower and potato to the bowl with the roasted garlic, then mix in the nonfat Greek yogurt and Parmesan cheese.
Season with salt and pepper, and mash or blend until reaching your desired creamy consistency.
