INGREDIENTS
350g Extra Firm Tofu
200g Broccoli
1 tbsp Sesame Oil
1 tsp Fresh Grated Ginger
2 cloves Garlic, minced
1 tbsp Low-Sodium Soy Sauce
1 tbsp Cornstarch
1 tsp Sesame Seeds
PREPARATION
Preheat the oven to 425°F.
Press the tofu for 10-15 minutes to remove excess moisture. Cut tofu into 1-inch cubes.
In a bowl, toss the tofu cubes with cornstarch until lightly coated.
Heat half of the sesame oil in a non-stick skillet over medium-high heat. Fry the tofu cubes until all sides are crispy and golden, about 3-4 minutes per side. Remove tofu and set aside.
While the tofu cooks, cut broccoli into florets. Toss broccoli with a drizzle of sesame oil, salt, and pepper. Spread evenly on a baking sheet.
Roast broccoli in the preheated oven for 15-20 minutes until tender with slightly crispy edges.
In a small bowl, mix low-sodium soy sauce, grated ginger, and minced garlic. Drizzle this sauce over the crispy tofu in the skillet and toss for a minute to coat evenly.
Plate the roasted broccoli and top with the sesame ginger tofu. Sprinkle with sesame seeds before serving.
