INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli, chopped
1/2 cup Zucchini, sliced
1/2 cup Red Bell Pepper, sliced
1 tsp Olive Oil
2 tbsp Fresh Herbs (Parsley & Dill)
Seasonings: Salt, Pepper, Garlic Powder
PREPARATION
Preheat your oven to 425°F.
Prepare the vegetables by chopping the broccoli, slicing the zucchini, and red bell pepper. Toss them with olive oil, salt, pepper, and a light sprinkle of garlic powder on a baking sheet.
Roast the vegetables in the oven for about 15 minutes until they are tender and slightly caramelized.
While the vegetables roast, pat the salmon dry and season both sides with salt, pepper, garlic powder, and the fresh herbs.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and sear the other side for an additional 3-4 minutes until the salmon is just cooked through.
Plate the pan-seared salmon alongside the roasted vegetables and garnish with an extra sprinkle of fresh herbs as desired.
