INGREDIENTS
1 cup riced Cauliflower (107g)
1 large Egg (50g)
2 tbsp Parmesan Cheese (10g)
3 oz Chicken Breast (85g) roasted
2 tbsp Buffalo Sauce (30g)
1/4 cup shredded Low-fat Mozzarella (28g)
1 tbsp Blue Cheese Crumbles (14g)
3 Fresh Basil leaves (optional garnish, 5g)
PREPARATION
Preheat your oven to 425°F (220°C).
In a bowl, combine the riced cauliflower, egg, and Parmesan cheese. Mix until the ingredients stick together to form a workable dough.
Transfer the cauliflower mixture onto a parchment-lined baking sheet and press it into a thin, even round to form the crust.
Bake the crust in the preheated oven for about 15 minutes until it begins to set and slightly brown.
While the crust is baking, toss the roasted chicken breast pieces with the buffalo sauce in a small bowl until evenly coated.
Remove the crust from the oven and layer the buffalo chicken evenly over the top.
Sprinkle the shredded low-fat mozzarella and blue cheese crumbles over the chicken.
Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
Once done, garnish with fresh basil leaves if desired, slice, and serve immediately.
