INGREDIENTS
1 medium Sweet Potato
2 large Whole Eggs
2 Egg Whites
2 ounces Turkey Sausage
1/2 medium Red Bell Pepper
1/4 medium Yellow Onion
1 cup Fresh Spinach
1 teaspoon Olive Oil
PREPARATION
Peel and dice the sweet potato into small, uniform cubes. Rinse and dice the red bell pepper, and finely chop the yellow onion.
Heat the olive oil in a large non-stick skillet over medium heat. Add the diced sweet potato and sauté for about 5 minutes until it starts to soften.
Add the chopped onion and red bell pepper to the skillet, and continue to sauté until the vegetables are tender and slightly caramelized, about 3-4 minutes.
Slice the turkey sausage if not pre-sliced and add to the pan. Cook for another 2-3 minutes to warm through.
Stir in the fresh spinach and allow it to wilt from the heat.
Meanwhile, in a separate bowl, whisk together the whole eggs and egg whites. Pour the egg mixture over the vegetables and sausage in the skillet.
Gently scramble the eggs with the other ingredients, cooking until the eggs are fully set but still moist.
Season with salt and pepper to taste, and serve hot.
