3 oz grilled chicken breast (85g)
1/2 medium zucchini (70g)
1/2 medium red bell pepper (45g)
1/4 medium red onion (25g)
1 tsp olive oil
1 tbsp fresh mixed herbs (rosemary & thyme)
Salt and pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Slice the zucchini, red bell pepper, and red onion into thin strips. Toss the vegetables with olive oil, fresh herbs, salt, and pepper.
Spread the seasoned vegetables on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly caramelized.
