PREPARATION
Pat the cod fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Once hot, sear the cod for about 3-4 minutes on each side until it is golden on the outside and flakes easily with a fork.
While the cod is cooking, steam the asparagus in a steamer or in a covered pan with a splash of water for 4-5 minutes until tender but still crisp.
