Enjoy a delightful plate of fluffy, protein-rich oat pancakes infused with mashed banana and a hint of cinnamon. The blend of oats, egg whites, nonfat Greek yogurt, and whey protein creates a satisfying and balanced meal, while the caramelized banana topping adds a natural sweetness and vibrant aroma.
INGREDIENTS
1/2 cup Rolled Oats (40g)
4 Egg Whites (approx. 120g)
1 medium Banana (mashed, ~100g)
1/4 cup Nonfat Greek Yogurt (60g)
1 scoop Whey Protein Powder (30g)
1/2 tsp Baking Powder
1/4 tsp Cinnamon
Pinch of Salt
Optional: 1 tsp Maple Syrup
Optional: 1 small Banana, sliced for topping (~50g)
PREPARATION
In a blender, process the rolled oats until they form a fine oat flour.
In a mixing bowl, combine the oat flour, egg whites, mashed banana, nonfat Greek yogurt, whey protein powder, baking powder, cinnamon, and a pinch of salt. Mix until well combined.
Heat a non-stick skillet over medium heat and lightly coat with cooking spray or a small amount of oil if desired.
Pour about 1/4 cup of batter per pancake into the skillet. Cook until bubbles form on the surface and the edges set, about 2-3 minutes.
Flip the pancakes and cook for an additional 2 minutes until golden and cooked through.
For the optional caramelized banana topping, place the sliced banana in the skillet over medium heat with 1 teaspoon of maple syrup and sauté until the slices are lightly caramelized, about 1-2 minutes.
Serve the pancakes warm, topped with the caramelized banana slices if using.
