INGREDIENTS
6 oz Mahi Mahi Fillet
0.75 oz Unsalted Raw Pistachios
1/2 medium Mango
1/4 medium Red Bell Pepper
1 tbsp Red Onion, chopped
1 tbsp Lime Juice
2 tbsp Fresh Cilantro, chopped
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Finely chop the pistachios or pulse them in a food processor until they form a coarse crumb. Season with a pinch of salt and pepper.
Pat the mahi mahi fillet dry with a paper towel. Brush lightly with olive oil and season with salt and pepper on both sides.
Press the fillet into the chopped pistachios to form an even crust.
Place the crusted fillet on a lightly greased or parchment-lined baking sheet and bake for 12-15 minutes or until the fish flakes easily with a fork.
While the fish is baking, prepare the mango salsa by dicing the mango, red bell pepper, and red onion. Combine them in a bowl with lime juice and chopped cilantro. Mix gently.
Once the fish is done, serve it hot with a generous spoonful of mango salsa on top or on the side.
Enjoy your flavorful, nutritious meal!
