Enjoy a nutrient-packed pizza that swaps traditional crust for a crispy cauliflower base topped with tender, buffalo-sauced chicken and a sprinkle of blue cheese. This dish brings a spicy kick balanced with fresh flavors and a satisfying crunch, making it perfect for a hearty lunch or dinner.
INGREDIENTS
100g Chicken Breast
150g Cauliflower Rice
1 Egg
28g Low-Fat Mozzarella Cheese
2 tbsp Almond Flour
2 tbsp Buffalo Sauce
1 tbsp Blue Cheese Crumbles
Seasonings (Salt, Pepper, Garlic Powder)
PREPARATION
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, combine the cauliflower rice, egg, almond flour, low-fat mozzarella cheese, and a pinch of salt, pepper, and garlic powder. Mix thoroughly until well incorporated.
Press the mixture onto the baking sheet in a thin, even layer to form the pizza crust. Bake for 12-15 minutes or until the crust is firm and lightly golden.
While the crust is baking, dice the chicken breast into small pieces. Season lightly with salt, pepper, and garlic powder.
Cook the chicken in a non-stick skillet over medium heat until fully cooked (about 5-7 minutes). Toss the cooked chicken with the buffalo sauce until evenly coated.
Remove the crust from the oven. Evenly distribute the buffalo chicken over the crust. Sprinkle blue cheese crumbles on top.
Return the pizza to the oven for an additional 5 minutes, just until the toppings are heated through and the blue cheese begins to soften.
Remove from the oven, slice, and serve immediately.
