PREPARATION
Preheat your oven to 425°F (220°C).
Wash the sweet potato thoroughly and pat dry. Rub the skin with olive oil and season with salt and pepper to enhance crispiness.
Place the sweet potato on a baking sheet and roast in the preheated oven for about 35-40 minutes, or until the skin is crispy and the inside is tender.
