INGREDIENTS
6 oz Salmon Fillet
100g Sweet Potato
1 tsp Olive Oil
1 tbsp Fresh Parsley (chopped)
1 tbsp Fresh Dill (chopped)
1 tsp Lemon Zest
PREPARATION
Preheat the oven to 400°F (200°C).
Peel and dice the sweet potato into 1-inch cubes. Toss with half a teaspoon of olive oil, salt, and pepper, and spread evenly on a baking sheet.
Roast the sweet potato in the oven for about 20-25 minutes until tender and slightly caramelized.
While the sweet potato roasts, pat the salmon dry. In a small bowl, mix chopped parsley, dill, lemon zest, a pinch of salt, and black pepper. Drizzle with the remaining olive oil.
Coat the salmon fillet evenly with the herb mixture.
Place the salmon on a lightly greased baking tray and bake in the oven for about 12-15 minutes, or until the flesh flakes easily with a fork.
Once both the salmon and sweet potatoes are cooked, transfer the sweet potatoes into a bowl and mash lightly to create a coarse mash.
Plate the herb-crusted salmon alongside a serving of the roasted sweet potato mash and serve warm.
