INGREDIENTS
5 oz Salmon Fillet (141g)
0.5 oz Pistachios, crushed (14g)
1 tsp Honey
0.5 tbsp Miso Paste
1 tsp Lemon Zest
Pinch of Salt
Pinch of Black Pepper
Olive Oil Spray
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Pat the salmon fillet dry with a paper towel and season lightly with a pinch of salt and black pepper on both sides.
Place the salmon on the prepared baking sheet. Spray lightly with olive oil to prevent sticking.
In a small bowl, combine the crushed pistachios with lemon zest. Press the pistachio mixture gently onto the top of the salmon, ensuring it adheres well.
In another bowl, mix together the honey and miso paste until smooth. Drizzle this glaze evenly over the pistachio crusted side of the salmon.
Place the salmon in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from oven, and let the salmon rest for a couple of minutes before serving.
