INGREDIENTS
7 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1/4 cup Greek Yogurt (plain, low-fat)
1 tsp Olive Oil
PREPARATION
Pat the salmon fillet dry with paper towels and season lightly with salt and pepper.
Heat a skillet over medium-high heat. Once hot, add half the olive oil and sear the salmon fillet skin-side down for about 3-4 minutes until crisp, then flip and cook for another 3-4 minutes until cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for 4-5 minutes until tender-crisp.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer to a bowl and mash with a fork or blend slightly. Mix in the Greek yogurt and the remaining olive oil until smooth, and season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve warm.
