1/2 cup cooked Black Beans (130g)
4 Egg Whites (approx. 120g)
1 Whole Egg (50g)
1 Whole Wheat Tortilla (50g)
1/4 cup diced Red Bell Pepper (40g)
1/2 cup Spinach (15g)
1/2 teaspoon Cumin
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F for the sweet potato.
Pierce the sweet potato with a fork and bake for about 40-45 minutes until tender. Once done, let it cool slightly then dice into small cubes.
