300g Extra Firm Tofu
75g Shelled Edamame
1 cup Broccoli (chopped)
1 medium Red Bell Pepper
1 medium Carrot
1/2 cup Snap Peas
2 tsp Cornstarch
1 tbsp Sesame Seeds
1 tbsp Fresh Ginger, minced
2 cloves Garlic, minced
1 tbsp Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Oil
PREPARATION
Drain the tofu and gently press to remove excess moisture. Cut the tofu into bite-sized cubes.
Place the tofu cubes in a bowl and toss with cornstarch ensuring each piece is lightly coated.
Preheat a nonstick skillet over medium-high heat. Lightly spray with cooking oil and add the tofu cubes. Cook until all sides are golden and crispy, then transfer to a plate.
In the same skillet, add a splash of sesame oil and sauté minced garlic and ginger until fragrant, about 30 seconds.
Add chopped broccoli, snap peas, sliced red bell pepper, and carrot slices to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
Stir in the shelled edamame and return the crispy tofu to the pan.
