INGREDIENTS
150g Low-Fat Cottage Cheese
100g Nonfat Greek Yogurt
2 Egg Whites
40g Almond Flour
1 Tbsp Unsweetened Dark Cocoa Powder
10g Dark Chocolate Chips
1 tsp Vanilla Extract
1 tsp Lemon Juice
PREPARATION
Preheat your oven to 350°F (175°C) and line a small square baking pan with parchment paper.
In a large bowl, combine the cottage cheese, Greek yogurt, and egg whites. Blend well until the mixture is smooth.
Stir in the vanilla extract, lemon juice, and unsweetened dark cocoa powder until uniformly mixed.
Gently fold in most of the dark chocolate chips, reserving a few to sprinkle on top later.
Pour half of the mixture into the prepared pan. Sprinkle the almond flour evenly over it to form a thin crust layer.
Pour the remaining cheesecake mixture over the almond flour layer and smooth out the top.
Sprinkle the reserved dark chocolate chips on top.
Bake for 20-25 minutes or until the edges are set and a toothpick inserted in the center comes out clean.
Allow the cheesecake squares to cool completely in the pan before cutting into portions.
Serve chilled for best texture and flavor.
