This meal is ideal for a clean eating approach without compromising on flavor.
INGREDIENTS
2 cups chopped Cauliflower (200g)
1/4 cup Almond Flour (28g)
2 large Eggs
2 tbsp grated Parmesan Cheese (10g)
1/4 cup Tomato Sauce (60g)
1/4 cup shredded Part-Skim Mozzarella Cheese (28g)
Fresh Basil sprigs (4)
Fresh Oregano sprigs (4)
PREPARATION
Preheat your oven to 425°F.
Steam or microwave the chopped cauliflower until soft. Once cooled, process or mash the cauliflower to form a rice-like texture. Place the cauliflower in a clean towel and squeeze out excess moisture.
In a mixing bowl, combine the cauliflower rice, almond flour, eggs, and grated Parmesan cheese. Mix until a cohesive dough forms.
Line a baking sheet with parchment paper. Spread the cauliflower dough into a thin, even circle, pressing firmly to form a crust.
Bake the crust in the preheated oven for 12-15 minutes until it begins to turn golden and firm up.
Remove the crust from the oven and spread the tomato sauce evenly over the top. Sprinkle the shredded mozzarella cheese on the sauce.
Return the pizza to the oven for an additional 5-7 minutes until the cheese is melted and slightly bubbly.
Once baked, remove the pizza from the oven and garnish with fresh basil and oregano sprigs. Allow to cool slightly before slicing.
Serve immediately and enjoy your crispy, herb-infused pizza.
