Savor a hearty, all-in-one skillet dish featuring lean ground turkey roasted with aromatic herbs, tender sweet potato cubes, and light egg whites for an extra protein boost. This dish is both comforting and nutrient-rich, making it perfect for breakfast, lunch, or dinner.
INGREDIENTS
5 oz Ground Turkey (lean)
1 cup diced Sweet Potato
2 large Egg Whites
1 tsp Olive Oil
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
2 cloves Garlic, minced
Salt and Black Pepper (to taste)
PREPARATION
Preheat the oven to 400°F.
In an oven-safe skillet, heat the olive oil over medium heat.
Add the minced garlic, rosemary, and thyme to the skillet and sauté for about 1 minute until fragrant.
Add the diced sweet potato and sauté for 5 minutes, stirring occasionally.
Push the sweet potato to the side of the skillet and add the ground turkey. Season with salt and pepper, breaking it up with a spatula as it cooks.
Once the turkey is partially cooked (about 5 minutes), mix it together with the sweet potato.
Create two small wells in the mixture and pour in the egg whites, allowing them to gently cook into a soft scramble within the skillet.
Transfer the skillet to the preheated oven and roast for 8-10 minutes or until the turkey is fully cooked, the sweet potato is tender, and the egg whites are set.
Remove from the oven, adjust seasoning if needed, and serve warm.
