2 slices Turkey Bacon
2 large Eggs

PREPARATION
Preheat your oven to 400°F. Thoroughly wash the sweet potato, then poke a few holes in it with a fork.
Place the sweet potato on a baking sheet and bake for about 45-50 minutes or until tender inside.
While the sweet potato is baking, cook the turkey bacon in a skillet over medium heat until it’s crispy. Remove and set aside on paper towels to drain.
In the same skillet, crack the eggs and cook them to your liking (sunny side up or over easy work great). Season with salt and pepper.
When the sweet potato is done, remove it from the oven and carefully slice it open down the center.
