INGREDIENTS
1 cup Cooked Lentils (200g)
1/2 cup White Button Mushrooms (72g)
1/4 cup Rolled Oats (20g)
1 large Egg (50g)
1/4 cup chopped Yellow Onion (40g)
2 tbsp Nutritional Yeast (16g)
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a food processor, blend the cooked lentils, mushrooms, oats, egg, chopped onion, garlic, and nutritional yeast until the mixture is well combined but still retains some texture.
Season the mixture with salt and pepper to taste. If the mixture feels too wet, stir in a bit more rolled oats.
Using your hands, form the mixture into balls roughly the size of a golf ball (about 12-15 balls depending on desired size) and place them on the prepared baking sheet.
Bake the meatless balls for 20-25 minutes, turning halfway through, until they are firm and lightly browned on the outside.
Allow the balls to cool slightly before serving. Enjoy them on their own, with a dipping sauce, or added to your favorite salad or grain bowl.
