INGREDIENTS
5.5 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower
2 tsp Olive Oil
1 Garlic Clove
Salt & Pepper to taste
1 Lemon Wedge
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil. Once hot, sear the salmon for about 3-4 minutes on each side until it achieves a golden crust and is cooked to your liking.
In the meantime, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until just tender.
For the cauliflower mash, steam or boil the cauliflower florets with a garlic clove until very tender, about 8-10 minutes. Drain and transfer them to a blender.
Add the remaining 1 tsp of olive oil to the cauliflower along with a pinch of salt and pepper, and blend until smooth with a few small lumps remaining for texture.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Squeeze the lemon wedge over the salmon just before serving.
