1/2 head Cauliflower (approx 250g)
1/2 cup Unsweetened Almond Milk
1/4 cup Grated Parmesan Cheese
1 tbsp Olive Oil
2 cloves Garlic
1/4 tsp Red Pepper Flakes
Salt and Pepper to taste
PREPARATION
Cut the cauliflower into florets. Steam the florets until they are very tender, about 8-10 minutes.
Place the steamed cauliflower in a blender along with unsweetened almond milk and grated Parmesan cheese. Blend until smooth and creamy. Season with salt and pepper to taste, and set aside.
Peel and devein the shrimp if not pre-prepped. Pat dry with a paper towel and season lightly with salt and pepper.
