INGREDIENTS
1 cup cooked black beans (172g)
1/3 cup cooked quinoa (58g)
1 whole egg
1 egg white
1/4 cup diced red bell pepper
1/4 cup diced yellow onion
1/8 cup rolled oats
2 tbsp nutritional yeast
1/2 tsp olive oil (approx. 0.5 tsp)
1 garlic clove, minced
2 lettuce leaves
1/2 tsp cumin
1/2 tsp chili powder
Salt and pepper to taste
PREPARATION
In a medium bowl, mash the cooked black beans with a fork until mostly smooth with some texture remaining.
Add the cooked quinoa, diced red bell pepper, diced onion, minced garlic, rolled oats, nutritional yeast, cumin, and chili powder to the bowl.
Crack the whole egg and add the egg white into the mixture. Season with salt and pepper, then stir until all ingredients are well incorporated.
Heat olive oil in a non-stick pan over medium heat. Form the mixture into patties (about 2 medium-sized patties) and place them in the pan.
Cook the patties for about 4-5 minutes on each side until they are crispy and heated through.
Prepare your lettuce wraps by gently washing and patting dry the lettuce leaves.
Place each crispy burger patty onto a lettuce leaf, wrap it up, and serve immediately.
