INGREDIENTS
4 oz Salmon Fillet
1 teaspoon Extra Virgin Olive Oil
2 cups Mixed Greens (Spinach and Kale)
1 clove Garlic
1 large Egg
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry with a paper towel, then season lightly with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once hot, place the salmon skin-side down if applicable and cook for about 3-4 minutes until the exterior is crispy.
Flip the salmon and cook for another 3 minutes until it's cooked to your desired doneness. Remove from the skillet and set aside.
In the same skillet, add a little more olive oil if needed and toss in the minced garlic. Sauté for 30 seconds until fragrant.
Add the mixed greens to the skillet and sauté for 2-3 minutes until they are wilted but still bright. Season with a pinch of salt and pepper.
In a separate small pan, fry the egg sunny-side up (or to your preference) using a non-stick spray or a small amount of olive oil.
Plate the crispy salmon alongside the sautéed greens and top with the fried egg. Serve immediately and enjoy the mix of textures and flavors.
