1 cup Fresh Spinach (30g)
1 Large Egg
2 Large Egg Whites
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes for even cooking. Dice the red bell pepper and white onion, and roughly chop the spinach.
Slice the turkey sausage links into rounds.
Heat the olive oil in a large non-stick skillet over medium heat. Add the diced sweet potato first, and sauté for about 5 minutes until they begin to soften.
Add the sliced turkey sausage, diced bell pepper, and onion to the skillet. Season with a pinch of salt and pepper. Continue cooking for another 5-7 minutes, stirring occasionally, until the sweet potato cubes are tender and the sausage is lightly browned.
Push the hash to one side of the skillet. Crack the whole egg and pour it into the cleared space, followed by the egg whites. Allow them to cook until set, then gently mix with the hash once cooked through.
