600 grams Cauliflower
1/2 cup Nonfat Greek Yogurt
1/2 cup Low-Fat Cottage Cheese
1 tbsp Olive Oil
4 cloves Roasted Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C). Place unpeeled garlic cloves on a small piece of foil, drizzle lightly with olive oil, wrap and roast for about 25-30 minutes until soft and caramelized.
While the garlic roasts, chop the cauliflower into florets and steam or boil them until tender, about 10-12 minutes.
Drain the cauliflower and transfer to a food processor or use a hand masher. Add the nonfat Greek yogurt and low-fat cottage cheese.
Squeeze the roasted garlic out of its skins and add to the cauliflower mixture along with lemon juice. Drizzle with the remaining olive oil.
