INGREDIENTS
5 oz Salmon Fillet
1 cup Cauliflower Rice
1.5 tsp Extra Virgin Olive Oil
1 Garlic Clove
1 tbsp Lemon Juice
2 tbsp Mixed Fresh Herbs (Parsley, Dill)
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides lightly with salt and pepper.
In a small bowl, mix half of the chopped fresh herbs, minced garlic, and lemon juice. Brush this mixture over the salmon to create a flavorful crust.
Heat a non-stick skillet over medium heat and add the extra virgin olive oil. Once hot, gently place the salmon in the skillet, skin side down if applicable.
Sear the salmon for about 3-4 minutes on each side until a golden crust forms and the fish is just cooked through. Remove and set aside.
In the same skillet, add the cauliflower rice and remaining herbs. Stir-fry for 2-3 minutes until the cauliflower rice is tender but still retains a slight crunch. Season lightly with salt and pepper.
Plate the cauliflower rice pilaf as a base, and top with the herb-crusted salmon. Drizzle any remaining pan juices over the top for extra flavor.
Serve immediately, garnished with an extra squeeze of lemon if desired.
