100g Baby Potatoes
1 tsp Butter (5g)
1 clove Garlic (3g)

PREPARATION
Preheat your oven to 400°F (200°C) for roasting the baby potatoes.
Toss the baby potatoes with a pinch of salt and a drizzle of olive oil if desired, and spread them on a baking sheet. Roast for 20-25 minutes or until golden and tender.
While the potatoes roast, season the sirloin steak lightly with salt and pepper on both sides.
Heat a heavy skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, adjusting time according to your preferred doneness.
In the last minute of searing, add the butter and minced garlic to the pan, tilting the pan to baste the steak with the herb-garlic butter. Sprinkle the fresh herb mix over the steak.
