INGREDIENTS
150 grams Cauliflower
1 Whole Egg (~50g)
1 Egg White (~33g)
50 grams Part-Skim Mozzarella
40 grams Turkey Pepperoni
1/4 cup Tomato Sauce (60g)
Salt & Pepper to taste
Dried Italian Herbs to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Rice the cauliflower using a food processor until it has a rice-like texture. Lightly steam or microwave the cauliflower for 3-4 minutes to soften slightly.
Place the cooked cauliflower in a clean towel and squeeze out as much moisture as possible. Transfer the dry cauliflower into a bowl.
Add the whole egg, egg white, a pinch of salt, and dried Italian herbs to the cauliflower. Mix thoroughly until a dough-like consistency is achieved.
Press the cauliflower mixture onto the prepared baking sheet, forming a thin, even circle to create your crust.
Bake the crust in the preheated oven for 12-15 minutes or until it starts to turn golden and crisp.
Remove the crust from the oven and spread the tomato sauce evenly over the surface.
Top with the part-skim mozzarella and evenly distribute the turkey pepperoni slices.
Return the pizza to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.
Remove from the oven, season with a little extra salt and pepper if desired, slice, and serve immediately.
