INGREDIENTS
7 oz Shrimp
1 cup Cauliflower Rice
1.5 tbsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
2 tbsp Fresh Mixed Herbs
Salt and Pepper to taste
PREPARATION
Pat the shrimp dry with paper towels and season lightly with salt and pepper.
Heat 1.5 tablespoons of olive oil in a non-stick skillet over medium-high heat.
Add minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add the shrimp to the skillet and sear for about 2-3 minutes on each side until they are pink and opaque. Squeeze in the lemon juice during the last minute of cooking.
While the shrimp are cooking, prepare the herb caulirice by placing cauliflower rice in a mixing bowl and stirring in the fresh chopped herbs, a pinch of salt and pepper.
Remove the shrimp from the skillet once cooked and arrange them on top of the seasoned herb caulirice.
Drizzle any remaining pan juices over the dish and serve immediately.
