INGREDIENTS
250g Firm Tofu
1 cup Broccoli (chopped)
0.5 cup Shelled Edamame
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Fresh Ginger, Grated
1 clove Garlic, Minced
PREPARATION
Press the tofu gently with a paper towel and cut into 1-inch cubes.
Preheat the oven to 425°F. Toss the chopped broccoli with a light drizzle of sesame oil (if desired) and a pinch of salt, then spread on a baking sheet. Roast for about 15 minutes until edges are slightly charred.
In a bowl, combine the low sodium soy sauce, grated ginger, and minced garlic. Set aside.
Heat a non-stick pan over medium-high heat and add 1 teaspoon of sesame oil. Add the tofu cubes and sauté until all sides are golden and crispy, about 6-8 minutes.
Once the tofu is crispy, pour the prepared sauce over the tofu in the pan and toss gently to coat all pieces evenly.
Plate the crispy tofu along with the roasted broccoli and shelled edamame. Garnish with a sprinkle of toasted sesame seeds.
Serve immediately and enjoy your nutritious, flavorful meal.
