2 cups Cauliflower Rice (150g total)
1/2 cup Kimchi (75g)
250g Firm Tofu
1 large Egg
1/2 cup Shelled Edamame (75g)
1 tsp Sesame Oil
2 tbsp Green Onions
2 cloves Garlic
1 tsp Ginger
PREPARATION
Press the tofu lightly to remove excess moisture and cut it into small cubes.
Heat sesame oil in a large skillet or wok over medium heat. Sauté minced garlic, grated ginger, and chopped green onions until fragrant.
Add the cubed tofu and stir-fry for about 4-5 minutes until the edges are crispy and golden.
Fold in the cauliflower rice and cook for an additional 3-4 minutes, allowing it to slightly brown on the edges.
Stir in the kimchi and edamame, cooking for another 2 minutes to combine the flavors.
Push the mixture to the side of the skillet. Crack an egg into the empty space and scramble it until just set, then mix it into the stir-fry.
