INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 clove Garlic
1 medium Sweet Potato
1 tsp Olive Oil (for searing salmon)
1 tsp Olive Oil (for green beans)
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a golden crust forms.
Gently flip the salmon and cook for an additional 3-4 minutes until desired doneness is achieved. Remove from heat and set aside.
Meanwhile, bring a pot of water to a boil and cook the sweet potato (peeled and diced) until tender, about 10-12 minutes. Drain and mash with a fork until smooth.
In another pan, heat the remaining 1 teaspoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
Add the green beans to the pan with garlic and sauté for about 4-5 minutes until they are bright green and slightly tender yet crisp.
Plate the sweet potato mash alongside the garlic green beans and top with the seared salmon. Serve immediately.
