INGREDIENTS
1 medium Sweet Potato (114g)
3 large Eggs (150g total)
3 ounces Turkey Sausage (85g)
1/2 medium Red Bell Pepper (75g)
1/4 medium Red Onion (30g)
1 cup Spinach (30g)
1 teaspoon Olive Oil (4.5g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Dice the sweet potato into small cubes. Toss with olive oil, salt, and pepper, and spread on a baking sheet.
Roast the sweet potato in the oven for about 20-25 minutes until tender and crispy, stirring halfway through.
While the sweet potato roasts, dice the red bell pepper and red onion.
Heat a skillet over medium heat and sauté the diced bell pepper and onion until they soften, about 5 minutes.
Add the turkey sausage (sliced or crumbled) to the skillet and cook until heated through.
Stir in the fresh spinach and allow it to wilt just slightly.
In a separate pan, cook the eggs to your preference (sunny side up is recommended for this dish).
Once the sweet potatoes are roasted, combine them with the sautéed vegetables and turkey sausage in the skillet, mixing gently.
Plate the hash and top with the sunny eggs. Season with additional salt and pepper if needed, and serve immediately.
