Enjoy a vibrant and flavorful stir-fry featuring crispy tofu cubes and tender vegetables tossed in a zesty sesame-ginger sauce. This dish brings a delightful crunch from lightly crisped tofu and a balanced medley of broccoli, bell pepper, and carrot, finished with a sprinkle of toasted sesame seeds for an extra nutty aroma.
INGREDIENTS
250g Firm Tofu (cubed, pressed)
100g Shelled Edamame
1 cup Broccoli florets
1/2 cup Sliced Red Bell Pepper
1/2 medium Carrot (julienned)
1 tbsp Cornstarch
1 tsp Sesame Oil
1 tsp Fresh Ginger, grated
1 clove Garlic, minced
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Seeds
PREPARATION
Press the tofu to remove excess water, then cut it into bite-sized cubes.
Toss the tofu cubes lightly in cornstarch until evenly coated.
Heat sesame oil in a non-stick skillet over medium-high heat. Add tofu cubes and sauté until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add garlic and grated ginger. Sauté briefly until fragrant.
Add broccoli, red bell pepper, carrot, and shelled edamame. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
Return the crispy tofu to the skillet. Drizzle with low-sodium soy sauce and rice vinegar, tossing gently to combine all ingredients well.
Finish with a sprinkle of sesame seeds and serve hot.
